"A love of food, with roots that reach way back to childhood," is what Chef Charles "Calio" Gullotta says was the inspiration for and is the creative force behind the business. "As the grandson of Sicilian immigrants, I was exposed to foods not found on the tables of my friends," he says, "things such as pigs knuckles, skin and snout, octopus, snails and of course, who could forget tripe!" While not very appetizing to discuss, they were lovingly and deliciously prepared by a woman who knew how to handle food and people his grandmother, Noni. "She was a strong influence on the way I look at food and how I convince others to trust in new taste experiences," says Chef Calio.
As a graduate of The Institute of Culinary Education in New York City, Chef Calio was invited to intern at the elegant Crabtree's Kittle House in Chappaqua, NY where he spent the summer of 2003 "Chef de Partie" under Executive Chef Greg Gilbert. All those 60 hour work weeks in a very busy, hot restaurant left little time to experiment with new ideas or to fulfill his own vision as Chef of his own kitchen. "When we entered school, chefs such as Daniel Boloud and Jean George Von Richten were setting the benchmark in New York. I aspired to take their lead and continue to search for new combinations and presentations. The paradox is that a chef has to be so disciplined as he attempts to break the boundaries of convention - I love it!"
Now settled in his own kitchen space in Pleasantville, NY, obtained through agreement with a local parish church, Calio Culinary Adventures has embarked on a food excursion to provide original creations as well as authentic regional dishes from around the world, traditionally prepared and presented to people in the New York area and in their own homes. This provides a more intimate encounter where the best things about dining out are brought in and focused on you and your guests. "I prefer events of twenty people or less," says Chef Calio. "I really love the personal nature of this approach. You get to know people much better and I love that they know who's creating this cuisine that I'm so proud of!" I enjoy explaining some of the methods and ingredients I use and try to teach folks a little bit about the culinary arts." This is not a caterer it's extreme cuisine! Putting new twists on classic dishes, as well as never before attempted offerings that's what Calio's all about.
